Gathering of Ingredients

  • 2 cups fresh elderflowers, violets, or chamomile (or 1 cup dried)
  • 4 sprigs fresh lemon balm, mint, or rosemary
  • Zest of 1 orange
  • 4 cups hot water (not boiling, to preserve floral notes)
  • 2 tbsp honey (or more, to taste)
